What exactly is Speck the Meat?!

Speck the meat was one of the great mystery meats of my mind for many years. I was intrigued, but didn’t know exactly what it was. A recent Flickr query for “speck iPhone” turned up this rad photo, and I was compelled to find out what kind of meat Speck the Meat really was.

According to Wikipedia.com: In the English speaking culinary world, “Speck” refers to Italian speck, a type of prosciutto, rather than German speck, which is identical to the Italian “lardo”. The term “speck” became part of popular parlance only in the eighteenth century and replaced the older term “bachen”, a cognate of “bacon”.

Right on. So it’s actually TWO different kinds of meat. Go Speck!
